The Pacas family, have been producing coffee for three generations; continually investing in farm improvements. They sort their coffee by different levels of ripeness to increase complexity in the cup. They have also split up the farm into different lots, or tablons. The farm covers a wide range of elevations, 1000 to 1700 masl. This variation in elevation contributes to the coffee ripening in stages, resulting in a diversity of flavors right across the farm.
