The plants that produce these beans are grown in highly fertile volcanic soil on estates with a rich coffee-growing heritage. In the early days of coffee production, the original owners of the land sought to produce the "best coffee in the world". Now the descendants of these estates seek to continue the tradition with a new, more sustainable, mentality while maintaining quality and experimenting with newer processes such as honey processing.
Honey processing involves leaving some of the 'mucilage' on the beans after the washing process, giving it a consistency similar to beans covered in honey. These beans are then dried in partial shade leading to higher humidity and increased drying time. This leads to more body in the roasted beans.
